American Shepherd's Pie
This American shepherds pie is a great way to celebrate St. Patrick’s Day! It is made with hamburger but you could use lamb or mutton.

- 1 to 1 1/2 pounds hamburger
- 2 tablespoons all-purpose flour
- 1/2 cup chopped green onions could use regular onion
- 1/2 cup chopped celery
- 1/2 teaspoon thyme
- 1 teaspoon basil leaves
- 1/2 teaspoon minced garlic
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 teaspoons Worcestershire sauce
- 1 tablespoon ketchup
- Pinch cayenne or a few drops hot sauce
- 1 15 1/4 ounce can whole kernel corn, drained or two cups frozen corn
- 1 cup frozen peas
- 3 cups leftover mashed potatoes
- 1 1/2 to 2 cups shredded cheese I use cheddar, you can use whatever you like
Break hamburger into a large skillet and sprinkle the flour over it. Add the onion and celery and brown. Drain if needed. Sprinkle on thyme, basil, garlic, black pepper and salt. Add Worcestershire sauce, ketchup and hot sauce along with corn and peas. Simmer about 15 or 20 minutes. Pour into a sprayed 9 x 13 casserole dish. Spread mashed potatoes over top. (Leftover potatoes spread better if heated some in the microwave if they have been refrigerated). Sprinkle on shredded cheese. Bake in preheated 400 degree oven for 25 to 30 minutes until cheese is melted and casserole is bubbling. Makes 10 to 12 servings.
