French Onion Roasted Potato Salad

This easy potato salad will quickly become a family favorite. It's easy and full of flavor.

Ingredients

  • 2 lbs of red potatoes diced
  • 2 tablespoons of olive oil
  • 1/2 tablespoon of garlic powder
  • 1/2 cup of cooked bacon crumbled
  • 1 cup of French onion dip (this can be found in the refrigerated section of your grocery store)
  • 1/4 cup of dill pickle relish
  • Crispy fried onions

Instructions

  • Preheat oven to 400 degrees. Mix diced potatoes, olive oil, and garlic powder in a big bowl and mix together. Spread onto a baking pan and roast for 45 minutes to an hour. Let potatoes completely cool.
  • Mix potatoes and remaining ingredients together and let chill in the refrigerator for at least an hour. Top with crispy fried onions before serving.

Notes

Serves 4. This recipe can easily be doubled.
