Apple Cranberry Bread

This easy quick bread is delicious. Serve warm with butter and you won't be sorry. It's perfect for the holiday season.

  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup of butter melted
  • 1 1/2 cups of all-purpose flour
  • 2 cups apples peeled and chopped (I used 3 apples)
  • 1 cup dried cranberries
  • 1/3 cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla flavoring
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts I used pecans


  • 1/2 cup of brown sugar
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of allspice
  • 1 cup of chopped pecans


  • In a large bowl whisk together eggs, sugar and butter. In a smaller bowl pour the 1/3 cup water over the cranberries and let them soak up the water for about ten minutes while you peel and chop the apples.
  • Combine the cranberries (drain off any water that wasn’t soaked up) and apples with the butter, eggs and sugar and whisk well. Add all the remaining ingredients and mix with a large spoon. Pour into a sprayed loaf pan.
  • Mix topping ingredients together and sprinkle over the top. Bake in a preheated 350 degree oven for 55-60 minutes.
