Beef and Cabbage Stew

Ingredients

  • 1 to 1 1/2 pounds of lean beef chuck or stew meat cut in bite-sized pieces
  • 2 to 3 tablespoons of oil or butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 to 3 carrots scraped and cut into rounds
  • 1/2 large head of cabbage chopped or about 4 or 5 cups
  • 3 to 4 medium potatoes peeled and cut into chunks
  • 1 8 ounce can tomato sauce
  • 1 14.5 ounce can beef broth
  • 1/2 cup water
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon minced garlic
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder

Instructions

  • Brown the stew meat, onions and celery in the butter or oil in a skillet on top of the stove.  Add to crock pot or slow cooker along with carrots, cabbage and potatoes.  In a bowl whisk together the tomato sauce, beef broth, water, black pepper, salt, minced garlic, paprika and chili powder.  Pour over ingredients in crock pot.
  • I make this in a 3 quart crock pot.  Cook on low for 6 to 7 hours or high for 4 to 5 hours or until all vegetables are well cooked.  Makes about 3 quarts of stew or 6 to 8 servings.
