This delicious classic has been around a long time. It's the wonderful addition to any holiday meal.

3 to 4large sweet potatoespeeled and grated
1/4stick of butter or margarine or 4 tablespoonssoftened
1/4cupmolassesI used sorghum molasses but can use any kind
1/2cupevaporated milkcan use half n half
Cream butter and brown sugar with mixer. Add eggs, molasses, milk, vanilla and spices and continue mixing. Fold in shredded sweet potatoes. Bake in sprayed 8 x 8 casserole dish in preheated 300 degree oven about one hour. Makes about 6 to 8 servings.
Some people add nuts to this. You can also add a little lemon or orange rind, grated, too.
