Iron Skillet Banana Blueberry Cobbler

The bananas and the blueberries together makes this a very flavorful cobbler.

  • 1 cup self-rising flour
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup sugar
  • 1 cup milk
  • 1 stick or 8 tablespoons or 1/2 cup butter melted
  • 4 bananas peeled and sliced
  • 1 cup blueberries
  • 1 cup toasted coconut


  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup self-rising flour
  • 1/2 cup regular or quick-cooking oats
  • 1 stick or 8 tablespoons or 1/2 cup butter softened
  • 1 cup pecans or walnuts


  • Spray a 10 inch iron skillet with cooking spray. Melt the butter in your skillet in the oven. (You could also make this in a 9 x 13 baking dish).
  • Whisk together the flour, nutmeg, sugar and milk. Pour this into the butter and stir to mix. Add the banana slices on top of the mixture and then add blueberries. Sprinkle on toasted coconut.
  • In a separate bowl mix brown sugar, cinnamon, self-rising flour and oats along with softened butter until like crumbs. Drop spoonfuls on top of the coconut. Sprinkle on nuts.
  • Bake in preheated oven at 375 degrees for 45 minutes or until brown on top.


To toast coconut spread out on a microwave safe plate and cook about 3 minutes. Stir once or twice to keep from burning.
