Ingredients
2tablespoonsbuttermelted
1/4cupbrown sugar
1egg
1cupmashed sweet potatoes
1teaspoonvanilla extract
1cupall-purpose flour
1teaspoonbaking soda
1/2teaspoonground cinnamon
1/4teaspoonground nutmeg
1cupbuttermilk
1cupnut piecespecans or walnuts (optional)
Oil or butter for grill or frying pan
Instructions
Mix together butter, brown sugar and egg with mixer. Add sweet potatoes and vanilla extract, continue mixing. Whisk together the flour, baking soda, ground cinnamon and nutmeg in a bowl and add to creamed mixture along with buttermilk. Fold in nuts.
Melt about 2 tablespoons butter or use 2 tablespoons of oil and cook pancakes 2 to 3 minutes on each side on hot griddle or in skillet. Makes about 10 pancakes.
Notes
I cook a medium sized sweet potato in the microwave peel and mash to use in this recipe. You could use canned sweet potatoes, too.
