Almond Flour Banana Pumpkin Muffins

These almond flour muffins are really good. They are easy to make and low carb.

Ingredients

  • 2 1/2 cups Bob’s Red Mill finely ground almond meal/flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup mashed banana
  • 1/3 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 3 eggs
  • 1/2 teaspoon apple cider vinegar
  • 1 1/2 tablespoon melted coconut oil
  • 1/2 cup chopped nuts pecans or walnuts

Instructions

  • Whisk together the almond flour, baking soda, ground cinnamon and nutmeg in a large bowl. Add banana, pumpkin, vanilla extract, honey, eggs, vinegar and coconut oil. Mix well with spoon. Fold in nuts. The nuts really make these muffins.
  • Spray a 12 cup muffin pan or use muffin liners. Bake in preheated 350 degree oven for 20 to 25 minutes until centers are done.

Notes

These are so good with honey on them.
