Southwest Chopped Salad

This refreshing chopped salad is super easy to make and absolutely delicious. The zesty dressing really makes this salad pop!

  • 4 cups of chopped romain lettuce can use iceburg or spinach
  • 3 hard boiled eggs
  • 1 can of pinto beans drained and rinsed
  • 5 pieces of bacon cooked drained and chopped
  • 1/2 cup of red onion chopped
  • 1/2 cup each of sweet peppers I used one red, orange and yellow

Dressing Ingredients

  • 1/4 cup of Ranch Dressing
  • 1/2 cup of picante salsa I use mild, if you like it spicy, use a hotter salsa


  • Put all salad ingredients in a bowl. Mix dressing ingredients together and pour over salad, mix together and chill. I think this salad is best served after an hour or so in the fridge.


You could add cheese, olives, black beans or any other toppings you like.
