Crock Pot Stew Meat and Kidney Beans

Ingredients

  • 1/2 pound dried red kidney beans
  • 1 cup water
  • 2 cups chicken broth
  • 3 carrots scraped and cut in bite-sized pieces
  • 1 small onion peeled and chopped
  • 1 to 1 1/2 pounds beef stew meat
  • 2 tablespoons cooking oil
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon thyme
  • 1 bay leaf
  • Shredded cheese for garnish

Instructions

  • Brown stew meat in cooking oil on top of the stove.  Add to crock pot along with remaining ingredients.
  • Cook on low for 6 to 7 hours or high for 3 to 4 or until meat is tender. Remove bay leaf.  Serve over pasta, rice or potatoes. Garnish with your favorite shredded cheese.   Makes about 8 servings.
