Crock Pot Stew Meat and Kidney Beans

- 1/2 pound dried red kidney beans
- 1 cup water
- 2 cups chicken broth
- 3 carrots scraped and cut in bite-sized pieces
- 1 small onion peeled and chopped
- 1 to 1 1/2 pounds beef stew meat
- 2 tablespoons cooking oil
- 1 14.5 ounce can diced tomatoes, undrained
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/4 teaspoon thyme
- 1 bay leaf
- Shredded cheese for garnish
Brown stew meat in cooking oil on top of the stove. Add to crock pot along with remaining ingredients.
Cook on low for 6 to 7 hours or high for 3 to 4 or until meat is tender. Remove bay leaf. Serve over pasta, rice or potatoes. Garnish with your favorite shredded cheese. Makes about 8 servings.
