Creamy Cucumber Salad

This Creamy Cucumber Salad is a refreshing addition to any meal!

  • 1 large cucumber slit lengthwise and take out seeds by scraping downward with a spoon (I don't peel my cucumbers but you can if you want)
  • 1 cup grape tomatoes (can slice in half or leave whole and can use regular or cherry tomatoes or whatever you have)
  • 1/2 of a medium sized onion peeled and cut into rings or chopped
  • 1 clove of garlic peeled and smashed
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/2 teaspoon black pepper or to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon white or cider vinegar
  • 2 teaspoon white granulated sugar


  • In a large bowl combine cucumber, tomato and onion.  Whisk together the mayonnaise, sour cream, black pepper, salt, vinegar and sugar.  Combine with vegetables. Refrigerate for 3 to 4 hours to let flavors marry before serving.  Makes about 4 cups.


You could add fresh radishes, zucchini or peppers to the vegetables.  You can add fresh or dried basil, oregano, thyme or parsley for seasoning or what you like best. I love adding fresh basil to mine.
