Pumpkin Chili

Ingredients

  • 1 to 1 1/2 pounds ground beef
  • 1 onion peeled and chopped
  • 1 green pepper chopped
  • 1 15 ounce can 100% pure pumpkin
  • 1 10 ounce can tomatoes and green chilis
  • 1 15.5 ounce can chili beans, undrained
  • 1 15 ounce can black beans, undrained
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1/2 cup water
  • 1/2 teaspoon minced garlic
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Brown ground beef, onion and green pepper in a large pot on top of the stove. Drain.
  • Add remaining ingredients and simmer 30 to 45 minutes. If too thick add a little more water.
  • Serve with a dollop of sour cream and your favorite shredded cheese on top.

Notes

This could be made in the crock pot, too. Just brown your ground beef, onion and green pepper. Drain. Add all ingredients and cook on high for about 3 hours or low 6 hours. Be sure to check to see if you need to add more water.
