Cheesy Sausage Muffins

  • 1/2 pound pork sausage
  • 1/3 cup green onions chopped (can use regular onions)
  • 1/3 green pepper chopped
  • 1/4 cup salsa I use chunky salsa
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon dry mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1/4 cup or 4 tablespoons butter or margarine melted
  • 1 cup milk
  • 3/4 to 1 cup shredded cheese of your choice I use 4 Cheese Mexican


  • Cook sausage, onion and green pepper in a skillet on top of the stove until sausage is cooked. Drain and set aside.
  • In a bowl combine flour, baking powder, sugar, dry mustard, pepper, salt and garlic powder and whisk together. Add milk, eggs, salsa and melted butter and stir with a spoon.
  • Using a spoon mix sausage mixture into the flour mixture. Spoon into a sprayed muffin tin, filling each cup about 3/4 full. Sprinkle shredded cheese on top of each muffin. Bake in preheated 375 degree oven for 25 to 30 minutes.
