Spicy Apricot Chicken

  • 4 boneless skinless chicken breasts, thawed or frozen
  • 1 teaspoon salt
  • 1/2 teaspoon coarse ground pepper can use regular ground pepper
  • 1 cup Apricot preserves
  • 1/2 cup honey
  • 1 package dry onion soup mix
  • 1/4 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1 teaspoon Dijon mustard


  • Rub salt and pepper into chicken breasts and place into a casserole dish. Mix together remaining ingredients in a bowl and pour over chicken. Cover with lid or Reynolds wrap and bake in preheated 350 degree oven for 1 hour. Serve over rice


This could also be made in the crock pot or slow cooker. Just cook on high for 4 hours or low for 6 hours.
