Cornmeal Chicken Nuggets

  • 2 to 3 large chicken breasts
  • 1 egg
  • 1/2 cup buttermilk or regular milk
  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon Cajun seasoning
  • 2/3 cup oil for frying


  • Cut chicken breasts into cubes. Whisk together the egg with the buttermilk in a bowl. Whisk together the cornmeal, salt, black pepper and Cajun seasoning in another bowl. Dip the chicken nuggets into the egg and buttermilk and then into the cornmeal mixture. Have oil hot in skillet on top of the stove. Brown nuggets, then turn to simmer and cover skillet for about 15 minutes.


I had two very large chicken breasts and made 40 nuggets.
