Spicy Roasted Sweet Potatoes

Ingredients

  • 3 large sweet potatoes washed, peeled and chopped in about 1 1/2 inch pieces
  • 3 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • pinch cayenne optional

Instructions

  • Wash, peel and chop sweet potatoes.  In a large bowl whisk together the oil, oregano, black pepper, salt, garlic powder and cayenne.  Toss the sweet potatoes in the oil.  Spread sweet potatoes on a sprayed baking sheet and bake in preheated 400 degree oven for about 40 minutes.  I turn them after 20 minutes.  Makes 3 to 4 servings.

Notes

Want an easy way to peel and chop sweet potatoes?  Put them in the microwave for about 2 minutes before roasting.  Peel while still hot or warm.
