  • 6 eggs boiled and peeled
  • 2 cups uncooked macaroni
  • 1 4 ounce jar chopped pimentos, drained
  • 1 cup chopped green onions divided
  • 2 teaspoons celery seeds
  • 1 tablespoon white granulated sugar
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 cup mayonnaise
  • 1 1/2 teaspoons smoked paprika divided
  • 1 tablespoon apple cider vinegar
  • 2 cups shredded cheddar cheese
  1. Boil the eggs, peel and chop. Cook the macaroni according to package directions (I cook mine for 8 minuteand drain. Drain pimentos. In a large mixing bowl, combine eggs, macaroni, pimentos, 3/4 cup of the chopped green onions, celery seed, sugar, black pepper, salt, garlic powder, mayonnaise, 1 teaspoon of the smoked paprika, apple cider vinegar and mix all together with a spoon.
  2. Fold in the shredded cheese. Sprinkle 1/2 teaspoon smoked paprika on top of salad along with 1/4 cup of chopped green onions. Chill for several hours or overnight.
Recipe Notes

I boiled 7 eggs instead of six and used the extra one for garnish on top of the salad along with the extra onions and paprika.
