Ingredients
4cupsfresh strawberrieswashed and hulled
3tablespoonslemon juice
3tablespoonswater
1/2cupwhite granulated sugar
2tablespoonscornstarch
1 or 2drops of red food coloringOptional
1cupall-purpose flour
1tablespoonwhite granulated sugar
2teaspoonsbaking powder
1/2teaspoonsalt
4tablespoonsor 1/2 stick or 1/4 cup buttermelted
1/2cupmilk
Instructions
Wash and hull your strawberries and set aside. Combine the lemon juice, water, 1/2 cup sugar and cornstarch in a pot and cook on medium heat until thickens like a sauce. (This only takes a couple minutes once it is hot). Remove from stove, stir in food coloring and pour over strawberries. Stir to coat the berries.
Spray a 2 quart casserole dish with cooking spray and pour in berries and sauce. Combine flour, 1 tablespoon sugar, baking powder and salt. Mix well with wire whisk. Pour in melted butter and milk. Mix with a spoon and drop by tablespoons on top of berries in casserole dish.
Bake in preheated 400 degree oven for 25 to 30 minutes until topping is cooked. Can brown top under broiler for a minute or two if you want it brown on top. Top with whipped cream or ice cream before serving.
Notes
You could also make this using strawberry pie filling or make it using other fresh fruits.
