Mexican Corn Fritters

These are so versatile and make a great meal or appetizer.

  • 1 1/4 cups yellow cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1 teaspoon dried cilantro or can use fresh cilantro
  • 1 4.5 ounce can chopped green chiles, drained (or could use any kind of peppers)
  • 1/4 cup chopped green onions
  • 1 1/2 cups fresh frozen or canned corn
  • 1 egg
  • 1 cup black beans drained (optional)
  • 3/4 cup buttermilk more or less
  • 2/3 cup cooking oil more or less


  • Whisk together the cornmeal, baking powder, baking soda, salt, black pepper, chili powder and cilantro in a large bowl. Add green chiles, onions, corn, egg, beans and buttermilk. Stir with spoon until batter is all wet.
  • Heat oil on top of the stove and drop by spoonfuls into hot oil. Smash out flat with spatula and cook until brown on one side. Flip over and brown on other side.
  • Drain on paper towels.


Serve with your favorite Mexican shredded cheese, sour cream, salsa and leftover black beans on top.
