Cinnamon Chip Banana Muffins
These easy muffins are wonderful with coffee! If you love banana bread and the taste of cinnamon these are for you. They keep well too!
Servings: 18 muffins
- 1/4 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 1/2 sticks butter or 12 tablespoons softened
- 3/4 cup white granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups buttermilk
- 2 ripe bananas mashed
- 2 cups cinnamon chips
Whisk together the flour, baking powder, baking soda, salt and ground nutmeg in a bowl. Cream the butter, sugar and eggs using a mixer. Add vanilla extract, flour mixture and buttermilk and continue mixing until all ingredients are wet
Fold in bananas and cinnamon chips with a spoon. (You can dredge cinnamon chips in a little flour if you are afraid they will sink to the bottom). Spray a 12 cup muffin pan with cooking spray, fill 1/2 to 3/4 full and bake in preheated 350 degree oven for 35 minutes until golden brown on top. Makes 18 muffins.
