4cupschopped cabbage or kalecould use a combination of both
1stick butter or 8 tablespoons or 1/2 cup
3/4cupevaporated milkcould use regular but the evaporated is richer
Combine cubed potatoes, chopped cabbage and green onions in a large pot on top of the stove. Cover with water, bring to a low boil and cook 15 to 20 minutes until potatoes are done.
Remove from stove and drain. Add the butter, salt, pepper and milk. Mash until like mashed potatoes. I just use a hand potato masher. Spoon into a casserole dish and serve. Can sprinkle on some green onion tops.
You could add bacon, chives, a little garlic powder or even nutmeg to this dish. This Irish colcannon can be reheated in the oven or microwave.
