This Creamy Cucumber Salad is a refreshing addition to any meal!

1large cucumberslit lengthwise and take out seeds by scraping downward with a spoon (I don't peel my cucumbers but you can if you want)
1cupgrape tomatoes(can slice in half or leave whole and can use regular or cherry tomatoes or whatever you have)
1/2of a medium sized onionpeeled and cut into rings or chopped
1cloveof garlicpeeled and smashed
1/2teaspoonblack pepper or to taste
1/2teaspoonwhite or cider vinegar
2teaspoonwhite granulated sugar
In a large bowl combine cucumber, tomato and onion. Whisk together the mayonnaise, sour cream, black pepper, salt, vinegar and sugar. Combine with vegetables. Refrigerate for 3 to 4 hours to let flavors marry before serving. Makes about 4 cups.
You could add fresh radishes, zucchini or peppers to the vegetables. You can add fresh or dried basil, oregano, thyme or parsley for seasoning or what you like best. I love adding fresh basil to mine.
