To make this pimento cheese really good, you must shred your own cheese. Store bought shredded cheese will never be as good as shredding your own!

Handy tip: A lot of pimento cheese recipes will say to mix with a mixer. I have never done that, we just mix with with a spoon and let it chill and it's delicious!
