Cabbage casserole with cheese and topped with buttered Ritz crackers makes a delicious side dish for any meal.  Great for fall, autumn, holiday meals or just anytime you want a good recipe with cabbage. Cabbage casserole is a quick, easy weeknight addition to your menu as well.  My family loves this casserole and we have it quite often.  It is great warmed over and may be even better that way.

1 small head of cabbage, shredded

1/2 cup milk

4 tablespoons butter or 1/2 stick or 1/4 cup, melted

2 cups shredded cheese ( I use sharp cheddar, you can use whatever you like)

2 teaspoons black pepper

1 teaspoon salt

2 eggs

Chop cabbage and add to large mixing bowl.  Whisk together the milk, butter, shredded cheese, black pepper, salt and eggs.  Toss with chopped cabbage.  Spray a 2 to 3 quart baking dish with cooking oil and add cabbage mixture to dish.  Sprinkle on topping below.


1 sleeve of Ritz crackers or about 30 crackers, crumbled

4 tablespoons butter or 1/2 stick or 1/4 cup, melted

Combine crackers with melted butter and sprinkle over casserole.

Bake casserole in preheated 350 degree oven 35 to 40 minutes.  Makes 6 to 8 servings.  Enjoy!
