Pumpkin waffles are wonderful in the fall of the year when everyone is craving pumpkin recipes.  Make these waffles for breakfast on a cool, fall morning or just anytime you want a treat.  These pumpkin waffles make a great dessert with ice cream or whipped cream on top.  We like these with my pumpkin syrup recipe but they are good with Maple syrup, too. This recipe could be doubled for a crowd or cut in half.  They keep well in the fridge for several days or you can freeze them.  Reheat in the microwave or toaster.

1 cup all-purpose flour

1/2 cup quick-cooking oats

1 tablespoon baking powder

pinch salt

1 teaspoon pumpkin pie spice (I use my recipe for pumpkin pie spice mix)

3 tablespoons white granulated sugar

1 cup milk

1 egg

2 tablespoons butter, melted

1 teaspoon vanilla extract

1/2 cup pure 100% pumpkin puree

1/2 cup chopped nuts, pecans or walnuts, (optional)

Whisk together the flour, oats, baking powder, salt, pumpkin pie spice and sugar in a large bowl.  Add milk, egg, butter, vanilla extract and pumpkin puree.  Stir well with spoon. Fold in nuts.  I use about 1/4 cup of waffle mixture for each waffle.  Makes about 8 waffles.  Enjoy!
