Ice cream topping is a must have in my home.  This copycat recipe for Magic Shell is so easy and it keeps out of the refrigerator for weeks.  You can double or triple this ice cream topping and change flavors easily.  There is only 2 ingredients in this make it yourself recipe. This is a fun little recipe project to make and only takes a few minutes.   Children will love this stuff and enjoy helping you put it together.  Store in a jar or any airtight container just on a shelf in the pantry.  I love experimenting and trying new ideas like this one and if it is easy that makes it even better!

2 tablespoons coconut oil

1 cup chocolate chips

Combine coconut oil and chocolate chips and heat in microwave or on top of the stove until melted.  Stir till smooth and drizzle over ice cream.  You can make different flavors by using different  chips such as peanut butter, butterscotch, mint chocolate, etc.   You can add a teaspoon of vanilla extract, peppermint extract or whatever you like. I made chocolate and butterscotch in the photos.  Makes about 1/2 cup. Enjoy!

You can use unrefined coconut oil or refined coconut oil.  The refined oil does not have as much of a coconut flavor.  This makes a great gift. If the topping hardens just reheat in the microwave.
