This Lime Rice, Black Bean and Corn Salad is the perfect addition to any gathering. Super easy to make and when served chilled it has a fantastic flavor. You can always add avocado, green chilies, tomatoes or any of your favorite ingredients.

3 cups of cooked long grain rice
1 can of black beans
1 cup of sweet yellow corn
1 cup of shoe peg corn
1 lime
2 tablespoons of olive oil
2 tablespoons of garlic salt
Red onion

Once rice is done cooking, add olive oil to it and stir. Cut lime in half and squeeze half of the lime over rice. Put in fridge to chill. Once cold add the remainder of the ingredients and stir. Squeeze the other half of lime over the salad. Put back in fridge for several hours. This is a perfect side dish for a company picnic or summer party. You can even serve with tortilla chips. Very versatile!
