Pumpkin French Toast is so good and an easy recipe to make for breakfast

I love anything with pumpkin in it. It is a great recipe to use up a half cup of pumpkin puree you might have in the fridge. You can cut this pumpkin French toast recipe in half or double it to make however many servings you want. A quick and easy morning breakfast with coffee. Kids love it as well as adults. We love it anytime for a breakfast treat.  My grandson is a picky eater but loves just about anything with pumpkin.  Try this recipe on people that don’t even like pumpkin! They may be surprised at this recipe.

6 slices bread (I use whole wheat but you can use whatever you like)
4 eggs
1/2 cup pure pumpkin (not the pumpkin pie mix)
1/2 cup milk (can use almond milk)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
Butter or coconut oil for frying

Pumpkin French Toast The Southern Lady Cooks

Whisk together eggs, pumpkin, milk, cinnamon, nutmeg and vanilla extract in a bowl. Dip each bread slice in egg mixture. Melt about a tablespoon butter or coconut oil in skillet. Fry each piece on both sides until brown. Serve with your favorite syrup. We love it with maple syrup or honey. Makes 3 servings of 2 slices each. Enjoy!
