This easy chicken tortilla soup is our “go to” soup for any outside event, such as tailgating or camping. It’s so easy because it is only 6 cans all thrown in a big pot together. You can do this on the stove top, over a camp fire, or in a crock pot. I know some people would always rather have homemade food, but this recipe is perfect for those occasions where you need a super easy way to prepare something.


1 (15.25 ounce) can of Black Beans, drained
1 (14.5 ounce) can of Diced Tomatoes
1 (4 ounce) can of Green Chilies
1 (14.5 ounce) can of Chicken Broth
1 (15.25 ounce) of Corn, drained
1 (9.75 ounce) can of White Premium Chunk Chicken Breast, drained
1 bag of Tortilla Chips
Shredded cheese
Sour Cream


Put all canned ingredients in crock pot and turn on desired temp. If you plan to eat this much later, just put on low and leave it. If you are in a hurry turn on high. You’re only wanting to heat everything up.


If making on the stove top, bring to boil and then turn down for about 20 minutes and it should be ready to serve! Toss some chips in the bottom of a bowl, cover with soup, top with cheese and sour cream! Perfect on a cool day!
We serve ours in big coffee mugs, makes it easier for outside eating.
