HOW TO MAKE PUMPKIN BUTTER

Pumpkin butter is a wonderful spread for your muffins and breads.  If you like pumpkin, you will love this butter.  It is so easy to make and keeps a couple weeks in the refrigerator.  You can double or triple the recipe and make as much as you like.  Make some for a neighbor or family member for a great homemade gift they will enjoy.  We love making anything at home rather than buying it in the store because it contains no additives.

Pumpkin butter is a great addition to any meal.

1 stick butter or 8 tablespoons or 1/2 cup, softened

1/4 cup honey

1/2 teaspoon ground cinnamon

pinch ground nutmeg

1/3 cup 100% pumpkin (not the pumpkin pie mix)

1 teaspoon vanilla extract

pinch salt (I only add salt if using unsalted butter)

Mix all ingredients with a mixer until smooth.  Store in refrigerator.  Makes about 1 cup.  Enjoy!
