Apple Coleslaw

This coleslaw keeps well in the fridge, is perfect to take to a picnic or gathering and is very versatile. You can always add other ingredients and make it more healthy if you like. This apple coleslaw goes great with any meal as a wonderful side dish.

Apple coleslaw is wonderful for any occasion.

3 cups chopped cabbage
1 carrot, scraped and shredded
2 apples, unpeeled and chopped, (can use 1 red and 1 green,. I used red delicious)
1/4 to 1/2 cup chopped onion, (I used purple because I think it is prettier but could use regular or green onion)
1 teaspoon celery seeds or 1/2 cup chopped celery
1/2 cup mayonnaise or Miracle Whip
2 tablespoons honey
1 tablespoon white granulated sugar
2 teaspoons white vinegar
1/8 teaspoon black pepper
pinch salt

Combine cabbage, shredded carrot, chopped apples, onion and celery seeds and toss. Whisk together mayonnaise, honey, sugar, white vinegar, black pepper and salt. Pour over slaw. Mix well with spoon. Refrigerate 2 to 3 hours before serving. Makes about 4 cups or 8 servings. Enjoy!

Note: You could add red or green peppers, raisins or nuts to this recipe. You can use lite mayo and leave out the sugar or use sugar substitute to make it more healthy.

  1. Everything I needed was already in my fridge! What a quick salad to prepare. Now, I am just waiting a while for those flavors to meld. I added raisins, and used white wine vinegar. Thanks for a timely post! 🙂
