Cheesy Sausage Muffins are always a good idea. This is a great breakfast muffin and one you will enjoy just anytime.

1/2 pound pork sausage
1/3 cup green onions, chopped (can use regular onions)
1/3 green pepper, chopped
1/4 cup salsa (I use chunky salsa)
2 cups all-purpose flour
3 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon dry mustard
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
1/4 cup or 4 tablespoons butter or margarine, melted
1 cup milk
3/4 to 1 cup shredded cheese of your choice (I use 4 Cheese Mexican)
Cook sausage, onion and green pepper in a skillet on top of the stove until sausage is cooked. Drain and set aside.  In a bowl combine flour, baking powder, sugar, dry mustard, pepper, salt and garlic powder and whisk together.  Add milk, eggs, salsa and melted butter and stir with a spoon.  Using a spoon mix sausage mixture into the flour mixture.  Spoon into a sprayed muffin tin, filling each cup about 3/4 full.  Sprinkle shredded cheese on top of each muffin.  Bake in preheated 375 degree oven for 25 to 30 minutes.  Makes 12 muffins.  Enjoy!

Just finished making these. And they are great. Had to use prepared mustard and some dehydrated veggies for the peppers. Will be making more. Thanks.
