SLOW COOKER CHICKEN, POTATOES AND BROCCOLI

This is an easy recipe to make in the crockpot and just good comfort food.  My family enjoys this recipe with Southern Cornmeal Hoecakes.

3 or 4 chicken breasts (I use the frozen ones. Could use other chicken parts, too.)
3 or 4 medium potatoes, peeled and cut into chunks
1 medium onion, peeled and sliced in rings
1 package onion soup mix
1 (10 3/4 ounce) can cream of mushroom soup
1 cup milk
1 (4 ounce) can mushrooms, undrained
1/2 teaspoon black pepper
1/2 teaspoon parsley flakes
1/2 teaspoon basil
1 bay leaf
1 teaspoon salt
1 (1 pound) bag frozen broccoli cuts
 
Add chicken to crockpot, whisk remaining ingredients together in a bowl except broccoli, pour over chicken pieces.  Cook on high for 4 hours or low 7 to 8 hours.  About 30 minutes before serving add the broccoli to the crockpot and cook until tender.   Serves 4 to 6 depending on number of chicken pieces.  Enjoy!

  1. got a lil problem… ready to make this recipe but I realized I have no potatoes…except the mix-with-water Idahoan ones for mashed potatoes..they are made from real potatoes! taste, texture, everything like making real ones.
    i cannot go get potatoes as a cat bit my right wrist, my dominant hand…that’s where the gear shift is, i wouldn’t be able to use both hands to drive,
    AND it’s extremely painful as its infected.. so.. I’m trying to decide how, or if, a person can make this recipe with instant potatoes…i guess I’m wondering if chicken breasts need to stay off the bottom of the crock pot, do i adjust cooking time since there are no potatoes, when, or do, i add the instant potatoes? Will start pretty soon.. hope to hear back.. thanx

      Hi Kristi, So sorry to hear about your cat bite and hope you are much better soon. I don’t know what to tell you about this recipe except that I would probably just make the potatoes separately from the rest of the recipe and use the gravy from the crock pot to go over the potatoes after the chicken and broccoli is cooked. I don’t think it will matter if the chicken is on the bottom of the pot. Just kind of watch it and when the chicken is tender you should be good to go. I hope this helps you. I have not tried adding that kind of potatoes to a crock pot recipe. I would just make them separate. Good luck.

  2. I am disabled And simply cannot stand in the kitchen to cook. I live alone with dogs so it is always a challenge to cook in right proportions for just 1 person.. I often consult the lil Google microphone to search out recipes for crock pot chicken. I have been extremely happy with the recipes I found here. I cook enough for 2 meals and am able to create enough variety that I don’t get tired of chicken. Thank you for your wonderful recipes.. you have added lovely flavors And layers to my life…

  6. If you want to use fresh broc. Just cook in micro.for a few min first .

  7. I broke the #1 rule of cooking. I didn’t read the recipe all the way though. I just put the broccoli in with everything else. – am I doomed?
