Cheese muffins are a great breakfast treat on the weekend or just anytime.  The bacon plus the cheese in the recipe makes them delicious and special. Your family will love these. Wonderful with coffee or serve them with a meal.  They will keep good for several days and can be reheated in the microwave or oven.  Who doesn’t like bacon and cheese together.  These are great slathered with your favorite jams and jellies.  You might also like our recipe for pineapple muffins with blueberries.

2 1/2 cups self-rising flour
2 teaspoons sugar
2 cups buttermilk
1 egg
2 tablespoons bacon drippings or oil
1 cup sharp cheddar cheese, shredded (could use whatever cheese you like)
5 slices bacon, cooked crisp and crumbled
Cook bacon and set aside. (I cook mine in the microwave)  Mix together flour, sugar, buttermilk and egg with a spoon.  Add drippings, cheese and crumbled bacon.  Spray a 12 cup muffin tin well.  Fill cups about half full. Cook in preheated 400 degree oven 25 – 30 minutes until done and golden brown on top.   Makes 12 muffins.   Enjoy!

  1. When you say muffin tins, do you mean the big muffin tins or the regular cupcake tins? Thanks!

  2. I was wondering if you could make the recipes more printer friendly. I want to print a lot of them but because of all the pics, which uses a lot of ink I won’t. So I try to store them instead then forget were I have them stored.

  4. I made these this morning for breakfast…..i used smoked gouda cheese and a little more bacon….they were wonderful….a big hit with the whole family….yummmm
