Butterscotch peanut butter cookies are easy and wonderfully delicious.

Butterscotch Peanut Butter Cookies

Butterscotch peanut butter cookies will melt in your mouth. They never last long at my house! Children and adults will love these yummy snacks. Wonderful with coffee or milk and a great gift for any holiday.  You could cut the recipe in half and they keep well in an airtight container.  This recipe offers a twist on just a normal peanut butter cookie. Let the kids or grand kids help you make these delicious cookies and they won’t last long.  My family loves them!

Ingredients for butterscotch peanut butter cookies:

1/2 cup sugar
1/2 cup brown sugar
3/4 cup butter or margarine
1/2 cup crunchy peanut butter
1 teaspoon vanilla
1 egg
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup butterscotch chips
1/2 cup walnuts or nuts of your choice
In a large bowl, beat sugars, margarine and peanut butter until light and fluffy.  Add vanilla and egg; blend well.  Stir in flour, baking soda and salt;  mix well.  Fold in butterscotch chips and nuts.  Shape dough into 1 inch balls.  Place 2 inches apart on ungreased cookie sheets.  Flatten with fork dipped in sugar.  Bake in preheated 375 degree oven for 8 to 10 minutes or until golden brown.  Remove from cookie sheets immediately and cool completely.  Makes 4 to 5 dozen depending on size.   Enjoy!

    These sound really good and I am anxious to try. Make your potato soup twice now and it is so delicious. Took a pot to a friend that lost her husband recently.
