BLUEBERRY BRAN MUFFINS WITH RAISINS AND NUTS

Blueberry bran muffins are great to make for breakfast on the go.

Blueberry Bran Muffins with Raisins and Nuts These little muffins are wonderful with a cup of coffee or just as a snack any time of the day.  They are good for you, too!

Blueberry Bran Muffins

2 1/2 cups of bran flakes (can use raisin bran but I like to add my own raisins)
1 1/4 cups milk (I use soy milk, you can use any kind you have)
1 egg
1/3 cup oil (I use canola oil)
3/4 cup sugar (I use splenda)
1/2 teaspoon salt (Optional)
3 teaspoons baking powder
3/4 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup raisins
1 cup blueberries
1/2 cup walnuts or nuts of your choice
 
Put bran flakes in a large bowl, cover with milk and let soak for about 10 minutes.  Stir in egg and oil.  Add remaining ingredients and fold in blueberries, walnuts, and raisins.  Spray  regular sized muffin tins and fill cups about 1/2 full.   Bake in preheated 400 degree oven for 25 minutes or until brown on top. 
 
These are wonderful spread with butter while still hot.  Enjoy!

    Always looking for recipes that are healthful as well as “Southern” delicious, I’m wondering if you have any measurement of approximately how many calories, carbs, fat grams, etc. are in these muffins. Truthfully I have not searched your blog to see if this information is available for your recipes, and I know I can figure it out for myself if I check the labels on each ingredient. Just thought I might save myself the trouble if you’ve already done it! Thanks!
