Applesauce muffins are wonderful with coffee or as a snack anytime.

Applesauce MuffinsWe love having these applesauce muffins on hand for breakfast.  They keep well in the fridge and can be reheated.  Make these muffins for anytime you want a snack with milk.  Children will love them and they would be good to put in lunchboxes.  So many times I will have 1 cup of applesauce in the fridge and this is a great way to use up leftover applesauce by making something your family will love.

Applesauce muffins would make a great lunchbox treat.

1 stick butter or margarine or 8 tablespoons or 1/2 cup, softened
1/2 cup white granulated sugar
2 eggs
1 cup applesauce
1 tsp. cinnamon
1/2 tsp. nutmeg
1  tsp. baking soda
1 tsp. vanilla extract
2 cups all-purpose flour
1 cup raisins, (optional)
1 cup nuts (optional) walnuts or pecans
Preheat oven to 350 degrees. Cream butter, sugar, and egg. Add remaining ingredients and mix well. Spray muffin tin. Bake in preheated 350 degree oven for 30 to 35 minutes.  Children will love these applesauce muffins with milk for a snack.  Makes 12 large muffins. Enjoy!
