APPLE BREAD PUDDING WITH VANILLA SAUCE

This bread pudding is a family favorite.

8 slices bread cubed (I used honey wheat)
1/2 cup raisins
3 large apples peeled and chopped
1/2 cup nuts (I use chopped walnuts)
1 cup brown sugar
1 3/4 cups milk
1/4 cup margarine or butter
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla extract
2 eggs beaten
Heat oven to 350 degrees. Grease a 7 x 11 baking dish. In a bowl, combine bread, raisins, apples, and nuts. In a saucepan, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir over medium heat until margarine is melted. Pour over bread mixture. Whisk together cinnamon, nutmeg, 1/2 teaspoon vanilla and eggs. Mix into bread mixture. Pour into baking dish. Bake for 50 minutes until pudding is set and apples are tender.
VANILLA SAUCE
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup milk
1/2 cup margarine
1 teaspoon vanilla extract
Mix sauce ingredients together and bring to a boil for one minute. Remove sauce from stove and stir in vanilla extract. Serve over bread pudding.
Pudding is also good served with ice cream or whipped cream. Enjoy.

  1. What type of apples are used?

  2. Looks delicious. My Mom used to make bread pudding with lemon sauce..this one has apples in it so the vanilla sauce will go with it.
