Hamburger vegetable soup is great comfort food on a cold day or anytime.

Hamburger Vegetable Soup is a family favorite! When my children were young and we lived on the farm, we killed our own beef every year. I always had a freezer full of meat and there was more hamburger than anything else, so I used to make vegetable soup with hamburger. All my children loved it and still do today.

Hamburger vegetable soup is wonderful for lunch or dinner.

1 1/2 – 2 lbs hamburger
3 or 4 carrots, sliced
1 large onion, chopped
6 or 7 medium potatoes peeled and cut up
2 or 3 stalks of celery chopped
1 pkg frozen corn
1 pkg frozen okra
1 (48 oz. can) tomato juice
1 tablespoon chili powder
2 tablespoons worcestershire sauce
salt and pepper to taste
water or chicken broth
Brown hamburger in skillet, drain. In a large soup pot, add all the ingredients except tomato juice. Add enough water to just cover the vegetables and simmer until potatoes and carrots are soft. Add tomato juice and continue to simmer on low heat for about 30 to 45 minutes. Serve with cornbread muffins. Enjoy! This makes about a gallon of soup and freezes well or keeps in refrigerator for several days.

Note:  You could make this in the crock pot, too.  Just brown hamburger first, drain and add remaining ingredients.  Cook on low about 7 hours or high 4 hours until potatoes and carrots are done.

  6. Can you let me know what size bag of okra. I have only seen the large bag. Same with the corn.

      You can use as much or as little as you like, Kim. I usually buy a 16 ounce size bag. You could use a cup or more. It is up to you. We like a okra so I usually use about 2 cups.

    I added less tomatoe juice and added a can ov beef broth really good left out the potatoes .

  9. Can I use tomato sauce in place of the tomato juice?

  13. My grandma used to make this for us in the winter when we were small, I have tried to make it but it has never turned out the same but now I know why I use beef broth instead of tomato juice.
