I have made this taco salad for years and my entire family loves it.  This taco salad is a meal by itself.  If you have a busy night, this is the perfect meal. You can chop up all the vegetables while the meat cooks and you will have a great meal in 15-20 minutes.

1 cup shredded cheddar cheese
1 large onion
1 can diced tomatoes or 2 large tomatoes chopped
1 (1 lb) can chili beans
1/2 head iceberg lettuce
1 lb. hamburger
Taco chips
Salsa (Optional)

Break lettuce into a large salad bowl. Brown hamburger and drain. Return hamburger to skillet and add chili beans and heat. Pour over lettuce. Cut onion into rings, add to salad. Then add shredded cheese and tomatoes.  Crush tacos on top and toss lightly. Can sprinkle salsa over top of salad to add more zest.  You an also add sour cream or top with a little ranch dressing. Very versatile taco salad with many options.

    I cook 3 pounds of hamburger with taco seasoning—-use one in taco salad..divide the remaining hamburger into 2 c0ontainers and freeze—when I need a quick meal, there it is—pop the microwave and in minutes there is another taco salad—–it has been over 100 degress for much of of summer here in Mo so I am getting pretty good at “cool kitchen meals”
