GEORGIA RECIPES!

A great recipe that is a favorite of President Jimmy Carter from Beth Styron!

Cheese Ring with Strawberry Preserves

16ounces sharp cheddar cheese, grated

3 ounces cream cheese, softened

1 cup of mayonnaise

1 small onion, chopped

1 cup of chopped walnuts or pecans

1/2 teaspoon garlic salt

Cayenne pepper to taste

1 cup of strawberry preserves
Combine all ingredients except strawberry preserves in food processor. Mix thoroughly and refrigerate for 2 to 3 hours. Place in ring mold and refrigerate for 2 hours or more. When ready to serve unmold on serving platter.Fill center with preserves and serve with butter crackers.

Georgia Peach Bread  from Americus Garden Inn Bed & Breakfast

This recipe is a great way to use all those over-ripe Georgia peaches.

½ cup shortening

1 ½ cups sugar

2 eggs

2 ¼ cups pureed peaches

1 tsp vanilla

2 cups flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

¼ tsp salt

1 cup finely chopped pecans

Cream sugar and shortening together.

Add eggs, mix thoroughly.

Add peach puree and vanilla.

Add dry ingredients and nuts. Stir until blended.

Pour into 2 loaf pans 5 x 9 that have been well greased and floured.

Bake at 325 for 55 minutes to 1 hour.

Let bread cool for a few minutes before removing from pan.
Yield: 2 loaves

Georgia Peanut Cake from Group Recipes – Jett2Whit

Ingredients

2 cups all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

a pinch of cinnamon – ( I like a BIG pinch)

1 cup smooth peanut butter

2/3 cup butter(lightly salted)

2 cups firmly packed brown sugar

6 large eggs

2 teaspoons vanilla

3/4 cup milk

peanut butter icing(optional)

1/2 cup dry roasted peanuts, chopped

How to make it

Grease and dust with floura 9 x 13 inch pan

Position shelf in lower third of oven and preheat to 350 degrees F.

Sift together flour, baking powder, salt and cinnamon.

In large mixing bowl, cream peanut butter and butter

Slowly add the sugar beating until creamy

Add eggs one at a time beating well after each addition

Beat in vanilla

With mixer on low speed, add flour alternately with milk.

Start with flour, then end with flour

Turn batter into prepared pan

Bake 40 – 45 minutes or until cake tests done

Cool completely
When cool spread with your favorite peanut butter icing…..
Sprinkle with the peanuts after frosting.

Southern Lady’s Georgia Peach Cobbler

5 cups fresh peaches, peeled and sliced

2 tablespoons cornstarch

3/4 cup brown sugar

1/2 cup water

2 tablespoons butter or margarine

2 tablespoons lemon juice

Mix together cornstarch, brown sugar, water, and lemon juice. Add peaches. Cook in a saucepan on top of the stove until thickened. Pour into a round 2 quart baking dish that has been sprayed with cooking spray. Drop batter by spoonfuls over peaches and kind of spread out as much as possible. Can sprinkle batter with sugar.

TOPPING:

3/4 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup sugar

3 tablespoons butter or margarine, melted

1 egg

5 tablespoons milk
Beat till smooth with whisk. Drop by spoonfulls over peaches and spread evenly. Bake in preheated 400 degree oven for 35 to 40 minutes.
