This Easy Baked Potato Salad recipe is one you will definitely want to save. We love potato salad and this is a great twist on a traditional recipe. You can make this in advance and it will be chilled and ready for any gathering. Super easy and keeps well.
2 lbs of baked potatoes
5 slices of cooked bacon, chopped (I bake mine in the oven, here is my recipe. I didn’t flour the bacon for this recipe)
1/2 cup of sharp cheddar cheese, shredded
1 cup of light sour cream
4 ounces of Greek yogurt cream cheese
I bake my potatoes in advance and put them in the fridge. Cold potatoes cut better and they also hold form. I don’t peel my potatoes because we love the skin, especially when made with my recipe. Set out cream cheese so it’s room temperature and once soft, mix in separate bowl with the sour cream. You can use a mixer to mix it, but I just used a spoon. Then in serving bowl, add all ingredients together and enjoy. Serve chilled. Makes 6-8 servings.
Note: You can add any garnishes you enjoy on a loaded baked potato, such as onion, chives, etc.
