This easy Crock Pot Pork Loin is the perfect recipe for having a lean meat on hand to make many wonderful dishes. I made this on a Friday and used it to make breakfast, lunch and dinner over the weekend. I love versatile dishes.
2-3lb Pork Loin Roast
2 teaspoons of garlic
4 slices of Kerry Gold Butter (this is Grass-fed 100% butter)
1 cup of Beef Broth
1 teaspoon Chili Powder
Spray crock pot with Pam cooking spray (I used the coconut oil cooking spray), place pork loin in crock pot. Slice the top of your pork loin 4 times across the top and place a piece of butter in each opening. Pat it down with the garlic and sprinkle the chili powder over the top. Pour the cup of beef broth over and cook on low for about 10 hours. About 9 hours in, you should be able to shred the pork and allow it to cook in the juices for another hour.
Now here are a few of the ways I prepared the pork once it was finished.
- For breakfast I browned it in a skillet, served with an egg and avocado.
- For lunch I served it over a chopped lettuce salad with lots of veggies.
- For dinner I browned a serving in the skillet, served it over rice, topped with green chilies, onions and salsa
You don’t have to brown it, but I do like it a little crispy. Other ideas are to serve it over a sweet potato or add a sugar free BBQ sauce and eat on a gluten free roll with a side of vegetables.
