This is my favorite fudge recipe. You will love this even if you don’t like raisins. You cannot taste them that much in the fudge. The bourbon is what makes this fudge and if you don’t use alcohol I would just find another fudge recipe to make. There are several on this site. This fudge makes a wonderful gift for friends or family. It is great for any holiday party or gathering. It keeps a long time in the refrigerator but never lasts long because you will want to eat it all.
1 cup raisins
1/2 cup Kentucky straight bourbon whiskey
1 cup chopped nuts, (walnuts or pecans)
2 cups white granulated sugar
1 cup evaporated milk
1 stick butter or 8 tablespoons or 1/2 cup
2 cups semi-sweet chocolate chips
7 ounce jar marshmallow creme
Combine raisins and bourbon in a dish and let soak for about an hour so raisins will soak up the bourbon. Combine sugar, milk and butter in a pan on top of the stove. Cook on medium, stirring constantly, until reaches the soft ball stage. (235-245 degrees on candy thermometer). It takes mine about 12 to 15 minutes to get to that stage. You can also drop a little in ice water from a spoon and if you can roll it into a soft ball with your fingers it should be at the right stage. Remove from heat and add chocolate chips, marshmallow creme and nuts. Stir until well mixed and melted. Stir in raisins and any bourbon not soaked up that is left in the dish. Spray or butter an 8 x 8 baking dish. Pour in fudge. Let set in refrigerator for at least 2 hours or until you can cut it with a knife. I cut this in pieces about 1 1/2 inch x 1 1/2 inch and get about 24 pieces of fudge. Just depends on what size you like it. Enjoy!
