TSLCAppleSauceMarshmallow1This spicy coffee cake is so good served as a dessert with coffee or with your morning coffee. The marshmallows just add to the spicy goodness to make this one you can throw together easily when you need a quick treat.

1 1/2 cups all-purpose flour
1/2 cup white granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon allspice
1/2 stick butter or 4 tablespoons or 1/4 cup, melted
2 eggs
1 cup applesauce
1 teaspoon vanilla extract
1 cup chopped nuts, Optional (Pecans or Walnuts)
2 1/2 cups miniature marshmallows or enough to cover top of dish (could use the large marshmallows, too)


Whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, cloves and allspice. Pour in melted butter and mix with a spoon. Add eggs, applesauce and vanilla extract. Fold in nuts.
Spray a 9 x 9 baking dish with cooking spray. Add batter. Cover with marshmallows and press them into the batter. Bake in preheated 350 degree oven 35 to 40 minutes. Makes about 9 servings.  Enjoy!
