3 medium-sized ripe bananas, mashed (I just peel and mash-up with a fork)
1 1/2 cups Raisin Bran cereal
1/2 cup milk
3/4 cup brown sugar
1 stick butter or margarine or 8 tablespoons or 1/2 cup, melted
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
Nuts, Optional (I usually use walnuts or pecans if I add the nuts)
Mash bananas with a fork and set aside. Put Raisin Bran in a dish and cover with the milk to soak into the cereal. (the raisin bran will soak up the milk in about 10 minutes or so) In a mixing bowl cream together the eggs, sugar, butter and vanilla. Add bananas and cereal and continue mixing. Whisk together the flour, baking powder, salt and cinnamon and then add to the creamed mixture and mix. Fold in nuts. Spray a 12 cup muffin tin with cooking spray. Fill cups just below full level. Bake 30 to 35 minutes in preheated 350 degree oven checking for doneness as ovens vary. Makes 12 muffins. Enjoy!
