Cheesy Smoked Sausage Pasta Skillet

Smoked Sausage Pasta Skillet is great comfort food and a quick, easy meal. Just add some cornbread muffins and a salad.  We love easy skillet meals during the week that you can just throw together with very little time in the kitchen.  This meal is good in summer and winter.  I like using fresh garden tomatoes and peppers in this recipe in summer.

1 pound smoked sausage

2 tablespoons butter or margarine

1 medium onion, chopped or about 1 cup

1 green pepper, chopped or about 1/2 cup

1 teaspoon minced garlic

1/2 teaspoon salt

1/4 teaspoon black pepper

few drops hot sauce, Optional

1 (14.5 ounce) can chicken broth

1 (14.5 ounce) diced tomatoes, undrained

1 (4 ounce) can green chilis, drained

2 1/2 cups uncooked rotini pasta (could use shells, macaroni, penne)

1 cup shredded cheese of your choice (could use more cheese. I used Mozzarella cheese)

Melt butter in skillet and brown sausage, onion and green pepper.  Add garlic, salt, pepper, chicken broth, tomatoes, green chilis and pasta.  Bring to a boil and let cook on low, uncovered,  until pasta is tender about 20 minutes.  Sprinkle on cheese while still hot.  Enjoy!

(Note:  You could also make this without the pasta and serve over rice for another easy and different dish)

If you look at the bottom of the recipe and click on where it says Pinterest, you should be able to pin them. No one else has said anything about having any trouble and I just tried it and it worked for me, Natalie.
