This mixed fruit cobbler is made with canned fruit with a homemade biscuit topping. You can mix fruits to make different cobblers. This is so good with ice cream. It is almost like a caramel sauce with fruit in it.
1 (15 ounce) can fruit cocktail, undrained
1 (15 ounce) can sliced peaches, undrained
1 (8 ounce) can pineapple tidbits, drained
1 cup brown sugar
4 tablespoons all-purpose flour
1 teaspoon vanilla extract
Spray a 3 quart casserole dish. Pour the brown sugar and flour into the dish and mix well with a wire whisk. Pour enough of the juice from the peaches into the flour mixture until it is smooth and syrupy. Add the drained pineapple, the undrained peaches and fruit cocktail, the vanilla extract and mix. Place in preheated 425 degree oven and cook about 20 minutes until bubbly. Remove from oven and add the biscuit topping below.
Biscuit Topping
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter or margarine or 4 tablespoons, softened
2 eggs
3/4 cup milk (I used 2%)
1 tablespoon sugar
1/4 teaspoon ground cinnamon
Nuts of your choice, Optional
Combine flour, baking powder and salt. Mix well with wire whisk. Cut in the butter and add eggs and milk. Spoon over the cobbler by spoonfuls. Combine cinnamon and sugar and sprinkle over the top. Place back in preheated 425 degree oven for about 30 more minutes until biscuit topping is nice and brown. Can sprinkle nuts over top. Makes 8 to 10 servings. Enjoy!

Can you tell me please why so many recipes call for all-purpose flour vs. self-rising flour? I can understand why, maybe, on this recipe, but why on so many others when you want the dough to rise? Thank you so much in advance for your reply. Love your posts on FB, too!
I hope this will answer your questions: http://www.buzzle.com/articles/self-rising-flour-vs-all-purpose-flour.html
This reminds me of a cobbler my mom used to make. So easy and so good. Thanks for the memory!

This looks amazing!! Can’t wait to give it a try….sounds like a great Saturday project
Have this in the oven now!
Hello…..I’m trying to find an easy recipe for “Fruit Cocktail Cake”. My mother-in-law used to make these all
the time and our family loved them ! She passed away in 1997 and we never found her recipe. I remember she used
to tell us it was so simple to make. I’m sure she used cake mix. Wish somebody in the family had wrote her
“simple recipes down”.
Really enjoying your Facebook pages and all the recipes !
Thanks so much for your time !

I happen to have a recipe for a “Fruit Cocktail Cake” that is an old recipe but not made with a cake mix. It is easy and very good. I usually serve it with cool whip topping on it. I would email it to you if you would like it. Email me and identify ” cake recipe” in the subject line. clcc4@msn.com
