Store brown sugar in the freezer and it won’t clump up. Best to place it in a plastic baggie and removie it from the box.

ORANGE BEET CASSEROLE

Orange Beet CasseroleThis is a very simple recipe for orange beets. We like it for a change and beets are so healthy.  Did you know beets are an instant energy source, good for dementia, cholesterol and help prevent colon cancer. They are high in vitamins, minerals, fiber, potassium and antioxidants.  The juice from the beet also helps to lower blood pressure.  We try to eat them often and I love them fresh from the garden.

2 (14.5 ounce) cans fresh cut sliced beets, drained (could use fresh cooked beets, too)
2 tablespoons flour
1/2 cup orange juice
2 tablespoons butter or margarine, melted
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon black pepper

Whisk together flour, juice and butter.  Make sure flour is dissolved in liquid. Whisk in remaining ingredients.  Pour over beets in a 1 quart casserole dish.  Bake in preheated 350 degree oven for 30 minutes stirring well after 15 minutes.   Makes 6 to 8 servings.  Enjoy!

  1. YUM! Birdseye made orange glazed beets and Brown Sugared Carrots (frozen) in the 1960′s in Ohio and both were delicious.
