This breakfast casserole is easy to make and the ingredients make it so good. The green chilis, peppers and pimento really add to the recipe.
1/2 pound pork sausage, cooked and drained
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup or 4 tablespoons butter or margarine, melted
4 eggs
1 cup cottage cheese
1 1/2 cups shredded cheddar cheese (can use more and use any kind of cheese you like)
1 (4 ounce) can green chilis, drained
1 (4 ounce) jar pimento, drained
1/4 cup green pepper, chopped
Cook sausage, drain and set aside. Whisk together flour, salt, pepper, butter, eggs and cottage cheese in a large bowl. Generously spray an 8 x 8 baking dish. Pour in egg mixture and sprinkle cooked sausage over top. Sprinkle on the cheese and add pimento, chilis and green pepper. Bake in preheated 375 degree oven for 35 minutes. Makes 6 to 8 servings. I’m not a cottage cheese lover. Can you use some sort if substitute?
How about ricotta cheese instead?
