Easy Cheesy Breakfast CasseroleThis breakfast casserole is easy to make and the ingredients make it so good.  The green chilis, peppers and pimento really add to the recipe.

1/2 pound pork sausage, cooked and drained
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup or 4 tablespoons butter or margarine, melted
4 eggs
1 cup cottage cheese
1 1/2 cups shredded cheddar cheese (can use more and use any kind of cheese you like)
1 (4 ounce) can green chilis, drained
1 (4 ounce) jar pimento, drained
1/4 cup green pepper, chopped
Cook sausage, drain and set aside.  Whisk together flour, salt, pepper, butter, eggs and cottage cheese in a large bowl.  Generously spray an 8 x 8 baking dish.  Pour in egg mixture and sprinkle cooked sausage over top. Sprinkle on the cheese and add pimento, chilis and green pepper.  Bake in preheated 375 degree oven for 35 minutes.   Makes 6 to 8 servings.  Enjoy!

  1. We made it this morning and it turned out really great. We did make a few alterations though, the big one being we used 8 eggs instead of 4. I knew 4 wouldn’t be enough for us and I used 6, but then added 2 more once it was all in the dish. I didn’t have cottage cheese so I used sour cream. Used bacon instead of sausage because that’s what we had. Didn’t have pimento so I used cherry tomatoes halved or quartered. Used the same amount of flour, onion, green pepper, green chile, cheddar cheese, salt & pepper. Had to bake it just 5 minutes longer (40 minutes total), probably because of the extra eggs. Let it sit about 5-10 minutes before cutting and it was perfect, the whole family loved it. Thanks for the recipe!
